Drying function
De Dietrich brings a feature to its new ovens that is almost indispensable today. The dehydration process allows you to dry a large variety of foods including fruit, vegetables, mushrooms, aromatic herbs or spices at a perfectly controlled temperature between 35 °C and 80 °C. The entire drying process prevents the formation of bacteria, so you can preserve your food for several months and have it on hand whenever you want. Choose only mature ingredients for drying, without signs of damage, rot or mould. Don't be afraid to dry sour or slightly sweet fruits (for example, sour apples), quite the opposite! The sugars and natural flavours are concentrated in the raw materials during dehydration, giving them a more pronounced and sweeter taste than fresh food.
To prevent some fruits (pears, apples, apricots, etc.) from browning, soak the sliced fruit in a mixture of 250 ml of water and 1 tablespoon of lemon juice before drying.
You can dry fruits and vegetables at the same time in De Dietrich multifunction ovens!
Always use only fresh ingredients. Wash them carefully, drain and dry them. Place the baking paper on a rack and spread the chopped ingredients evenly on it. Use the rack on level 1 (if you have more than one rack, slide them onto the racks on levels 1 and 3). Turn the ingredients with a high water content several times during drying. The values shown in the table may vary depending on the type of raw material being dried, its maturity, thickness and moisture content.
